That is what I told this client who approached me to cater their son’s wedding party. Large party catering is not my normal business, but after returning from a 3 month job in New Zealand I needed the work. The result was a gorgeous celebration of summer produce fashioned into Israeli inspired vegetarian dishes. Fresh corn polenta with fried eggplant and tomato sauce, kisir bulgar salad with pomegranates, marinated runner bean salad, boards of berries, and cheeses, roasted fennel and cumin carrot platters drizzled with honey, and pitchers of alcohol free cocktails all kept guests entertained and fortified.
