The sister of a regular, weekly client contacted me. She lives on the other side of the country and wanted to surprise her brother with a birthday treat. Having cooked for his family I knew of his love for chocolate, berries and coconut. I also knew of his lactose intolerance. The result was this triple layer, dark chocolate, raspberry cake garnished with local tayberries and coconut flakes toasted with maple syrup and lime.
